Soil and climate conditions
Egyptian farming areas along the Nile Delta offer ideal conditions for growing artichokes: rich soil, natural irrigation, mild climate and no winter frosts. The cultivated variety is typically the violet artichoke, selected for its adaptability to industrial processing. Harvesting is done by hand between November and March, when the product reaches its highest quality. The artichokes are processed and preserved in brine within a few hours of harvesting to maintain freshness, colour and texture.
Processing and preservation
Palimex artichokes are cleaned, calibrated and immersed in a saline solution following precise standards. This treatment allows for long-term preservation without refrigeration, while keeping the organoleptic qualities intact. The brine is balanced to ensure microbiological stability and a pleasant, neutral flavour – perfect for further processing.
