Cauliflower is one of the most widely used brassicas in both gastronomy and the agri-food industry, thanks to its nutritional value, versatility and excellent yield in processing. Palimex selects and imports frozen cauliflower from Egypt, where agronomic expertise and favourable climate conditions allow for the production of a consistent, healthy product that meets European standards. Growing conditions
Cauliflower is demanding in terms of soil quality and climate stability. In Egypt, it thrives in agricultural regions north of Cairo, where mild winter temperatures and controlled irrigation allow for optimal development of the curd. The result is a compact, bright white cauliflower with no blemishes and a texture suitable for both industrial use and cooking. Cultivation is GMO-free, following crop rotation and sustainable agronomic techniques.
Harvesting and freezing
Harvesting takes place from December to March, and processing occurs within a few hours of cutting. The cauliflower is manually or mechanically selected, cleaned, cut into florets and quickly blanched before being frozen using IQF (Individually Quick Frozen) technology. This process ensures excellent preservation of colour, aroma and texture, blocks bacterial growth and maintains the vegetable’s nutritional value. The final product is practical, safe and ready to use.
Available formats
Palimex supplies frozen cauliflower mainly in floret format – whole florets calibrated by diameter (e.g. 20–40 mm, 30–50 mm, etc.). A smaller cut (flakes) is also available for soups and ready meals. Each format is designed to meet specific needs: from quick-service catering to the food industry, including canteens, catering services and retail deli lines.

Notably, cauliflower contains glucosinolates and indole-3-carbinol – natural compounds that recent studies have shown to have antioxidant and detoxifying effects, contributing to disease prevention.

With around 25 kcal per 100 grams, cauliflower is ideal for low-calorie and balanced diets. It is gluten-free, naturally vegan and well tolerated even by those with food sensitivities or restrictive diets.
